Description

A delightful side dish featuring tender roasted asparagus spears coated in olive oil and topped with melted Parmesan cheese.


Ingredients

  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese
  • Optional: Lemon zest or juice for extra brightness

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the asparagus under cool water and pat dry with a towel.
  3. Trim the woody ends off the spears, about 1-2 inches from the bottom.
  4. Toss the asparagus with olive oil, salt, and pepper until well-coated.
  5. Arrange the asparagus in a single layer on a baking sheet, making sure not to crowd the pan.
  6. Roast the asparagus in the preheated oven for about 10-12 minutes, until tender and slightly crispy.
  7. Remove from the oven, then sprinkle the grated Parmesan cheese over the hot asparagus.
  8. Return to the oven for an additional 2-3 minutes, until the cheese melts.
  9. Drizzle with fresh lemon juice or sprinkle with lemon zest before serving, if desired.

Notes

For a spicy kick, sprinkle some red pepper flakes before roasting. You can also swap out Parmesan for a different cheese, like Pecorino Romano or feta.
