- 1 pound fresh asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup freshly grated Parmesan cheese
- Optional: Lemon zest or juice for extra brightness
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the asparagus under cool water and pat dry with a towel.
- Trim the woody ends off the spears, about 1-2 inches from the bottom.
- Toss the asparagus with olive oil, salt, and pepper until well-coated.
- Arrange the asparagus in a single layer on a baking sheet, making sure not to crowd the pan.
- Roast the asparagus in the preheated oven for about 10-12 minutes, until tender and slightly crispy.
- Remove from the oven, then sprinkle the grated Parmesan cheese over the hot asparagus.
- Return to the oven for an additional 2-3 minutes, until the cheese melts.
- Drizzle with fresh lemon juice or sprinkle with lemon zest before serving, if desired.
Notes
For a spicy kick, sprinkle some red pepper flakes before roasting. You can also swap out Parmesan for a different cheese, like Pecorino Romano or feta.
