Description

These rice paper egg rolls with mint are a refreshing twist on traditional egg rolls, packed with fresh herbs and crunchy vegetables.

Ingredients

  • Rice paper wrappers
  • Cooked shrimp or choice of vegetables (for vegetarian option)
  • Fresh mint leaves
  • Fresh cilantro
  • Rice noodles
  • Julienned carrots
  • Julienned cucumber
  • Lettuce leaves
  • Dipping sauce (hoisin or peanut sauce)

Instructions

  1. Soak rice paper wrappers in warm water for about 10-15 seconds until they soften.
  2. Place each wrapper on a clean surface ready for filling.
  3. Layer a selection of cooked shrimp or your chosen vegetables, followed by mint leaves, cilantro, rice noodles, julienned carrots, cucumber, and a lettuce leaf in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, ensuring everything is neatly tucked in.
  5. Roll tightly from the bottom to the top, creating a neat bundle.
  6. Repeat with the remaining ingredients to fill a platter.
  7. Serve with your favorite dipping sauce for a delicious finish.

Notes

For the best results, soak rice paper wrappers just until pliable. They will continue to soften as you fill and roll them.
