Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 lb lamb, cut into chunks
  • 2 tablespoons cumin seeds
  • 2 tablespoons chili oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Prepare the Noodles: In a mixing bowl, combine the flour and water until a dough forms. Knead this dough on a floured surface until it’s smooth, then let it rest for about 30 minutes.
  2. Shape the Noodles: Roll the rested dough into thin strips and carefully stretch the strips into long noodles.
  3. Sauté the Aromatics: In a pan over medium heat, add a splash of oil and sauté the minced garlic until fragrant.
  4. Cook the Lamb: Add the chunks of lamb and cumin seeds to the pan and cook until the lamb is tender and browning.
  5. Add Flavor: Pour in the soy sauce and chili oil, mixing until the meat is well coated.
  6. Cook the Noodles: In a separate pot, boil water and cook the freshly made noodles for 2-3 minutes.
  7. Combine and Serve: Drain the noodles and add them to the lamb mixture, tossing gently to combine.
  8. Garnish and Enjoy: Serve hot, garnished with freshly chopped cilantro.
