- 1/2 cup water
- 1 lb lamb, cut into chunks
- 2 tablespoons cumin seeds
- 2 tablespoons chili oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Prepare the Noodles: In a mixing bowl, combine the flour and water until a dough forms. Knead this dough on a floured surface until it’s smooth, then let it rest for about 30 minutes.
- Shape the Noodles: Roll the rested dough into thin strips and carefully stretch the strips into long noodles.
- Sauté the Aromatics: In a pan over medium heat, add a splash of oil and sauté the minced garlic until fragrant.
- Cook the Lamb: Add the chunks of lamb and cumin seeds to the pan and cook until the lamb is tender and browning.
- Add Flavor: Pour in the soy sauce and chili oil, mixing until the meat is well coated.
- Cook the Noodles: In a separate pot, boil water and cook the freshly made noodles for 2-3 minutes.
- Combine and Serve: Drain the noodles and add them to the lamb mixture, tossing gently to combine.
- Garnish and Enjoy: Serve hot, garnished with freshly chopped cilantro.
Notes
Store leftover noodles and lamb in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
