Description

Delightful Red Velvet Cookie Bars with cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar (light or dark)
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring (liquid or gel)
  • 1/2 teaspoon vinegar (distilled or white)
  • 8 ounces full-fat cream cheese (brick style)
  • 2 1/23 1/2 cups powdered sugar (sift if lumpy)
  • 1/4 teaspoon salt
  • 12 tablespoons cream (if needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Mix the flour, cocoa powder, baking powder, baking soda, and salt in a bowl and set aside.
  3. Cream the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Incorporate the egg, egg yolk, vanilla extract, red food coloring, and vinegar. Mix until combined.
  5. Combine the dry ingredients with the butter mixture, mixing just until combined.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean. Allow to cool completely.
  7. Prepare the frosting by whipping the cream cheese until smooth, then gradually adding powdered sugar and salt. Adjust with cream if necessary.
  8. Frost the cooled cookie bars with the cream cheese frosting. Cut into squares and serve!

Notes

These cookie bars are great served with vanilla ice cream or fresh fruit. Store in an airtight container at room temperature for up to five days or freeze for up to three months.
