- 1 cup red lentils
- 2 cups water
- 1 cup gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon garlic powder (optional)
- Herbs (optional, for flavor)
Instructions
- Rinse the red lentils under cold water.
- Cook them in 2 cups of water until they’re soft (15-20 minutes).
- Preheat your oven to 375°F (190°C).
- Mash the cooked lentils in a large bowl until smooth.
- Add gluten-free flour, baking powder, salt, olive oil, and optional garlic powder.
- Mix everything together until well combined.
- Shape into small rolls and place them on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
These rolls are great with soups, salads, or on their own. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
