Description

Nutritious and gluten-free red lentil bread rolls, perfect for a healthy side dish or snack.


Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 cup gluten-free flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)
  • Herbs (optional, for flavor)

Instructions

  1. Rinse the red lentils under cold water.
  2. Cook them in 2 cups of water until they’re soft (15-20 minutes).
  3. Preheat your oven to 375°F (190°C).
  4. Mash the cooked lentils in a large bowl until smooth.
  5. Add gluten-free flour, baking powder, salt, olive oil, and optional garlic powder.
  6. Mix everything together until well combined.
  7. Shape into small rolls and place them on a baking sheet lined with parchment paper.
  8. Bake for about 20-25 minutes or until golden brown.
  9. Allow to cool slightly before serving.

Notes

These rolls are great with soups, salads, or on their own. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
