Ingredients

- 6 Radishes, thinly sliced
- 1 cup Fresh peas, blanched
- 4 cups Lettuce or mixed greens
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- Salt, to taste
- Pepper, to taste
Instructions
- Wash and slice the radishes thinly.
- Bring a pot of water to a boil and blanch the fresh peas for 1-2 minutes. Immediately chill them in ice water.
- Combine the sliced radishes, blanched peas, and your choice of greens in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a separate small bowl.
- Drizzle the dressing over the salad mixture and toss gently until everything is coated. Serve immediately.
Notes
For extra flavor, consider adding lemon zest or swapping mixed greens for arugula. Best served fresh.
