Description

A quick and delicious meal featuring tender shredded chicken, sweet corn, and zesty spices wrapped in warm tortillas.


Ingredients

Scale
  • 2 cups shredded chicken (cooked and cooled)
  • 1 cup sweet corn (canned or fresh)
  • 1/2 cup Cotija cheese
  • 4 tortillas (flour or corn)
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/4 cup cilantro (freshly chopped)
  • Salt and black pepper (to taste)

Instructions

  1. Combine all the filling ingredients in a bowl.
  2. Mix everything until well combined.
  3. Warm the tortillas in a pan or microwave.
  4. Take a generous portion of the chicken mixture and place it onto each tortilla.
  5. Roll up the tortillas tightly to form wraps.
  6. Serve immediately, or wrap in foil for later enjoyment.

Notes

Feel free to swap out the cotija cheese for feta or omit it to cater to dietary restrictions. Rotisserie chicken can also save time.
