Description

Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 1 cup barley
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 2 cups water
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a drizzle of oil in a large pot over medium heat. Add the beef, cooking until well browned on all sides.
  2. Toss in the chopped onion, minced garlic, sliced carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in the barley, beef broth, water, and bay leaf. Mix well to combine.
  4. Increase the heat to bring everything to a boil. Once boiling, reduce the heat and let it simmer gently for about 90 minutes, or until the beef is tender.
  5. Season to taste with salt and pepper.
  6. Don’t forget to remove the bay leaf before serving.
  7. Garnish with fresh parsley for a vibrant finish.
