- 1 lb beef stew meat, cut into cubes
- 1 cup barley
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 2 cups water
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a drizzle of oil in a large pot over medium heat. Add the beef, cooking until well browned on all sides.
- Toss in the chopped onion, minced garlic, sliced carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the barley, beef broth, water, and bay leaf. Mix well to combine.
- Increase the heat to bring everything to a boil. Once boiling, reduce the heat and let it simmer gently for about 90 minutes, or until the beef is tender.
- Season to taste with salt and pepper.
- Don’t forget to remove the bay leaf before serving.
- Garnish with fresh parsley for a vibrant finish.
