Description

Ingredients

  • 2 salmon fillets
  • 1 cup cherry tomatoes, halved
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and cook just until fragrant.
  3. Toss in the halved cherry tomatoes and sautรฉ for about 3-4 minutes until they soften.
  4. Squeeze the fresh lemon juice into the skillet and give it a stir.
  5. Season the salmon fillets with salt and pepper, then place them in the skillet.
  6. Cook for 5-7 minutes on each side, or until the salmon flakes easily with a fork and is cooked through.
  7. Serve the salmon over a bed of rice or alongside a fresh side salad, garnished with fresh parsley.
