Description

A comforting one-pot dish combining classic mac and cheese with juicy chicken and zesty Italian flavors.


Ingredients

  • 2 cups rotini or elbow pasta
  • 1 pound chicken breast, diced
  • 2 cups chicken broth
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Drizzle olive oil in a large pot and heat over medium.
  2. Add the diced chicken along with garlic powder, Italian seasoning, salt, and pepper. Sauté until the chicken is browned and cooked through.
  3. Stir in the pasta, alongside the chicken broth and marinara sauce. Bring this mixture to a boil.
  4. Once boiling, reduce heat to low, cover, and let it simmer for about 10-12 minutes until the pasta is tender and most of the liquid is absorbed.
  5. Remove the pot from heat and mix in the shredded mozzarella and grated Parmesan until they melt into a creamy blend.
  6. Serve warm and enjoy this rich and hearty one-pot meal!

Garnish with freshly chopped basil or parsley and pair with a green salad or garlic bread.
