- 2 cups rotini or elbow pasta
- 1 pound chicken breast, diced
- 2 cups chicken broth
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Drizzle olive oil in a large pot and heat over medium.
- Add the diced chicken along with garlic powder, Italian seasoning, salt, and pepper. Sauté until the chicken is browned and cooked through.
- Stir in the pasta, alongside the chicken broth and marinara sauce. Bring this mixture to a boil.
- Once boiling, reduce heat to low, cover, and let it simmer for about 10-12 minutes until the pasta is tender and most of the liquid is absorbed.
- Remove the pot from heat and mix in the shredded mozzarella and grated Parmesan until they melt into a creamy blend.
- Serve warm and enjoy this rich and hearty one-pot meal!
