Description

Ingredients

  • 1 1/4 cups Powdered Sugar
  • 4 ounces fine almond flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 3 egg whites, room temperature
  • A pinch of salt
  • 1/4 cup white sugar
  • 34 drops orange gel food color (optional)
  • 1 cup butter, room temperature (for filling)
  • 4 cups Powdered Sugar (for filling)
  • 1 tablespoon vanilla bean paste or 2 teaspoons vanilla extract (for filling)
  • 6 teaspoons milk or heavy cream (to thin the buttercream as needed)

Instructions

  1. Whisk together the powdered sugar, almond flour, and pumpkin pie spice until combined.
  2. Combine the egg whites and a pinch of salt in an electric mixer.
  3. Whip the egg whites until foamy.
  4. Slowly add the granulated sugar while increasing the mixer speed to high.
  5. Set a timer for 15 minutes, whipping until stiff peaks form.
  6. Gently incorporate the orange gel food color into the whipped egg whites.
  7. Fold the almond flour and powdered sugar mixture into the egg whites until smooth.
  8. Line a baking sheet with parchment paper or a macaron mat.
  9. Fill a piping bag with batter and pipe 1-inch circles onto the sheet.
  10. Tap the baking sheet on the counter to remove air bubbles.
  11. Allow macarons to sit for an hour at room temperature.
  12. Preheat your oven to 325°F.
  13. Bake for about 15 minutes until matte and dry.
  14. Let them cool completely on the baking sheet.
  15. Beat the butter for the filling until smooth.
  16. Gradually mix in the powdered sugar until creamy.
  17. Whip in the vanilla bean paste or extract.
  18. Pipe the buttercream onto half of the macarons, and sandwich with the tops.
  19. Store in an airtight container in the refrigerator.

Notes

Ensure egg whites are at room temperature. Store leftovers in the refrigerator for best flavor and texture.
