- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Mix together the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the greased baking dish to create a crust.
- Beat the softened cream cheese in a large mixing bowl until it’s smooth and free of lumps.
- Add in the pumpkin puree, sugar, eggs, vanilla extract, pumpkin pie spice, cinnamon, nutmeg, and salt. Mix everything together until well combined and creamy.
- Pour the pumpkin cheesecake filling over the graham cracker crust, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes or until the center is set and a toothpick inserted comes out clean.
- Allow the bars to cool to room temperature and then refrigerate for at least 4 hours to fully set.
- Cut into bars and serve!
Notes
Top with whipped cream, crushed pecans, or caramel sauce for added flavor. Can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
