- 1 can (15 oz) pumpkin puree
- 2 cups almond milk (or any dairy-free milk)
- 1/2 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Combine the rolled oats, pumpkin puree, almond milk, maple syrup, vanilla extract, pumpkin pie spice, salt, and baking powder in a large bowl. Stir until mixed well.
- Pour the mixture into the prepared baking dish. If you like a bit of crunch, sprinkle the nuts on top.
- Bake for 25-30 minutes, or until the mixture is set and the top is lightly golden.
- Allow it to cool slightly before serving, and enjoy warm!
Notes
For the best texture, use rolled oats instead of instant or steel-cut oats. Mix ingredients the night before for a quick bake in the morning!
