- 1 cup unsalted butter (2 sticks, softened)
- 1/2 cup powdered sugar
- 3.4 ounce box of instant pistachio pudding mix
- 1 2/3 cups all-purpose flour
- 1 1/2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 4–5 drops green food coloring
Instructions
- In the bowl of a stand mixer, add the softened butter and beat until it’s light and fluffy.
- Gradually add in the powdered sugar, pistachio pudding mix, vanilla extract, almond extract, and green food coloring. Mix until well combined.
- Slowly incorporate the all-purpose flour, mixing until just combined.
- Cover the dough with plastic wrap and refrigerate for about 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a dough scoop or approximately 1 ½ tablespoons of dough, roll into balls.
- Place the dough balls on the prepared baking sheet, spaced about 1 inch apart.
- Bake in the preheated oven for 9-11 minutes, until edges are just turning light brown.
- Allow the cookies to set on the baking sheet for 3-5 minutes before transferring them to a cooling rack to cool completely.
Notes
For added crunch, you can include chopped pistachios. Cookies can be frozen for up to three months.
