Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl until well combined.
- Beat the softened butter and granulated sugar together in a large mixing bowl until fluffy and light.
- Gradually add the eggs, mixing well after each addition.
- Mix in the pink lemonade concentrate, fresh lemon juice, lemon zest, vanilla extract, and buttermilk until combined.
- Slowly add the dry ingredients to the wet mixture, stirring until the batter is smooth. Add a few drops of pink food coloring if desired.
- Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- Whisk together the powdered sugar, pink lemonade concentrate, fresh lemon juice, vanilla extract, and additional food coloring until smooth for the frosting.
- Spread the frosting evenly over the cooled cake and let it set for a few minutes before slicing.
