  • ½ cup (120 milliliters) heavy cream

Instructions

  1. Rinse and prep the asparagus by trimming the tough ends.
  2. Chop the onion into small, uniform cubes and mince the garlic.
  3. Sauté the butter in a large stockpot until golden, then add onions for about 4-5 minutes.
  4. Add garlic, salt, and pepper, sautéing for an additional 30-45 seconds.
  5. Make a roux by whisking in the flour for about 2 minutes.
  6. Combine the broth and asparagus, mixing gently.
  7. Simmer uncovered for 15-20 minutes until asparagus is tender.
  8. Blend the soup until smooth using an immersion blender.
