Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Pink lemonade glaze (made by mixing powdered sugar with pink lemonade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the lemon zest and fresh lemon juice, mixing until combined.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  5. Scoop out the dough using a tablespoon and roll it into balls. Place them on a baking sheet lined with parchment paper, leaving space in between.
  6. Create a small indentation in the center of each dough ball using your thumb.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Cool slightly on the baking sheet, then fill the thumbprint with the homemade pink lemonade glaze.

Notes

For best flavor, use fresh lemon juice and butter at room temperature. Store in an airtight container at room temperature for up to one week.
