Description

A refreshing and vibrant appetizer featuring sweet pineapple and mango atop crispy baguette slices, perfect for summer gatherings.


Ingredients

  • 1 cup fresh pineapple, diced
  • 1 cup fresh mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste
  • 1 baguette or crostini, sliced
  • Olive oil, for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced pineapple, mango, red onion, cilantro, lime juice, and a pinch of salt and pepper in a mixing bowl. Mix everything together and set it aside.
  3. Arrange the baguette slices on a baking sheet and brush them lightly with olive oil.
  4. Bake the slices in your preheated oven for about 5-7 minutes, or until they turn golden and crispy.
  5. Top each crostini generously with the pineapple mango mixture.
  6. Enjoy them immediately while they’re fresh, crispy, and oh-so-delicious!
