- 1 cup fresh pineapple, diced
- 1 cup fresh mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper, to taste
- 1 baguette or crostini, sliced
- Olive oil, for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the diced pineapple, mango, red onion, cilantro, lime juice, and a pinch of salt and pepper in a mixing bowl. Mix everything together and set it aside.
- Arrange the baguette slices on a baking sheet and brush them lightly with olive oil.
- Bake the slices in your preheated oven for about 5-7 minutes, or until they turn golden and crispy.
- Top each crostini generously with the pineapple mango mixture.
- Enjoy them immediately while they’re fresh, crispy, and oh-so-delicious!
