- 1 cup shredded coconut
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 cup crushed pineapple, drained
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven: Set it to 350°F (175°C) and grease a baking dish to prevent sticking.
- Cream the butter and sugar: In a mixing bowl, use a hand mixer or a whisk to cream them together until light and fluffy.
- Add eggs one at a time: Mix well after each addition to incorporate air into the batter.
- Incorporate pineapple and vanilla: Stir in the crushed pineapple and vanilla extract until evenly mixed.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and shredded coconut.
- Mix the wet and dry ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring just until combined. Avoid overmixing!
- Spread in the dish: Pour the batter into your prepared baking dish and spread it evenly with a spatula.
- Bake: Place in the oven and bake for 30-35 minutes or until golden brown and a toothpick inserted into the center comes out clean.
