- 1 pound boneless skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 cup fresh pineapple, finely diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- 8 small corn or flour tortillas
Instructions
- Toss the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt until it’s all evenly coated.
- Heat a large skillet over medium-high heat.
- Add the chicken in a single layer and let it cook undisturbed for about 3 minutes until it starts to develop a nice crust.
- Stir the chicken and continue cooking for another 4 to 5 minutes until fully cooked through. Remove from heat.
- Mix the diced pineapple, red onion, cilantro, and lime juice in a separate small bowl to create a fresh salsa.
- Warm the tortillas in a dry skillet or microwave. Assemble the tacos by adding the cooked chicken and generously topping with the fresh salsa.
Notes
Consider adding a dollop of sour cream or guacamole on top. They pair well with tortilla chips and salsa, or a fresh garden salad.
