Description

Delicious Pineapple Chicken Tacos bring together juicy chicken and fresh pineapple for a vibrant dish perfect for quick weeknight dinners.


Ingredients

  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup fresh pineapple, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas

Instructions

  1. Toss the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt until it’s all evenly coated.
  2. Heat a large skillet over medium-high heat.
  3. Add the chicken in a single layer and let it cook undisturbed for about 3 minutes until it starts to develop a nice crust.
  4. Stir the chicken and continue cooking for another 4 to 5 minutes until fully cooked through. Remove from heat.
  5. Mix the diced pineapple, red onion, cilantro, and lime juice in a separate small bowl to create a fresh salsa.
  6. Warm the tortillas in a dry skillet or microwave. Assemble the tacos by adding the cooked chicken and generously topping with the fresh salsa.

Notes

Consider adding a dollop of sour cream or guacamole on top. They pair well with tortilla chips and salsa, or a fresh garden salad.
