Description

Ingredients

  • Pasta (such as spaghetti or fusilli)
  • Fresh basil pesto
  • Cherry tomatoes
  • Olive oil
  • Salt
  • Pepper
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cherry tomatoes in olive oil, salt, and pepper before spreading them on a baking sheet. Roast in the preheated oven for about 20 minutes, until they are beautifully caramelized.
  3. Cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Combine the cooked pasta, roasted tomatoes, and fresh basil pesto in a large bowl. Toss until everything is well-coated.
  5. Plate the pasta mixture and sprinkle grated parmesan cheese on top if desired.

Notes
