- 4 slices of bread (sourdough or any crusty bread)
- 4 tablespoons basil pesto
- 1 1/2 cups shredded mozzarella cheese (or 4 slices of fresh mozzarella)
- 2 tablespoons unsalted butter, softened
- Optional: 1/4 cup grated Parmesan cheese
Instructions
- Spread 1 tablespoon of pesto on one side of each slice of bread, ensuring it’s evenly distributed.
- Add a generous layer of shredded mozzarella or two slices of fresh mozzarella on two slices (pesto side up). Sprinkle some grated Parmesan over the cheese if desired. Top with the remaining two slices (pesto side down).
- Spread a thin layer of softened butter on the outside of each sandwich.
- Preheat a non-stick skillet or griddle over medium heat. Add the sandwiches and grill for 2-3 minutes on each side, pressing down gently with a spatula.
- Remove the sandwiches from the skillet when golden brown and cheese is melted. Slice in half and serve warm!
