Description

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, divided
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup toasted pecans
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Mix the crushed graham crackers, melted butter, and 1/4 cup of brown sugar in a bowl. Press this mixture firmly into the bottom of a springform pan to form the crust.
  3. Beat the cream cheese in a large mixing bowl until smooth. Add the remaining brown sugar, sour cream, eggs, and vanilla, mixing until everything is well combined.
  4. Fold in the toasted pecans gently for that delicious crunch.
  5. Pour the filling over the prepared crust, smoothing the top with a spatula.
  6. Bake for 50-60 minutes, or until the center is just set.
  7. Remove from the oven and allow it to cool.
  8. Drizzle the caramel sauce over the cooled cheesecake and garnish with additional toasted pecans if desired.
  9. Refrigerate for at least 240 minutes (or overnight) before serving for the best flavor and texture.
