Description
A delightful blend of traditional flavors and textures, these chewy cookies are filled with pecans and oats, reminiscent of pecan pie.
Ingredients
Scale
- 1 cup butter, softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup chopped pecans
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and white sugar until the mixture is smooth and fluffy.
- Add the eggs one at a time, ensuring each one is well incorporated before adding the next. Stir in the vanilla extract.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the rolled oats, chopped pecans, and chocolate chips if you’re using them.
- Drop dollops of dough onto ungreased baking sheets, leaving a little space between each cookie.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown.
- Cool on the baking sheets for a few minutes before transferring to wire racks to finish cooling.
Notes
For a healthier option, try using coconut oil instead of butter or almond flour instead of all-purpose flour.
