Description

A delightful blend of traditional flavors and textures, these chewy cookies are filled with pecans and oats, reminiscent of pecan pie.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup chopped pecans
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and white sugar until the mixture is smooth and fluffy.
  3. Add the eggs one at a time, ensuring each one is well incorporated before adding the next. Stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the rolled oats, chopped pecans, and chocolate chips if you’re using them.
  6. Drop dollops of dough onto ungreased baking sheets, leaving a little space between each cookie.
  7. Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown.
  8. Cool on the baking sheets for a few minutes before transferring to wire racks to finish cooling.

Notes

For a healthier option, try using coconut oil instead of butter or almond flour instead of all-purpose flour.
