Instructions
- Mix the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract in a bowl until smooth.
- Line an 8×8-inch baking dish with parchment paper, allowing it to overhang for easy removal.
- Spread the yogurt mixture evenly into the prepared dish and smooth the top.
- Sprinkle granola and optional mini chocolate chips over the top and press down gently.
- Freeze for 3-4 hours until solid.
- Remove from the dish using the parchment edges, cut into bars, and enjoy!
