Deliciously rich and nutty Peanut Butter Crinkle Cookies featuring crispy edges and a soft, chewy center, perfect for any occasion.

- 1 1/3 cups (190 g) all-purpose flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (113 g) unsalted butter (room temperature)
- 1 cup (210 g) packed light brown sugar
- 1/2 cup (125 g) creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup (70 g) granulated sugar
- 3/4 cup (90 g) confectioners’ sugar (divided)
Instructions
- Preheat your oven to 350° F (175° C) and line two cookie sheets with parchment paper. Set them aside.
- Whisk together flour, baking soda, baking powder, and salt until well-combined in a medium bowl. Set aside.
- Beat the room temperature butter with the brown sugar and peanut butter for about 4 minutes, until fluffy.
- Add in the egg and vanilla extract, mixing until fully incorporated (around 30 seconds).
- Gradually add in the flour mixture with the mixer on low speed. Mix until just combined, being cautious not to overmix.
- Prepare two small bowls: one with granulated sugar and the other with 1/2 cup of confectioners’ sugar.
- Scoop approximately 1 tablespoon of dough, roll it into a ball, and then roll in granulated sugar first. Follow by coating with the powdered sugar. Repeat until all dough is used, placing the rolled balls 2 inches apart on the cookie sheets.
- Bake for 12-14 minutes, until the cookies look firm around the edges and have developed their characteristic crinkles on top.
- Allow to cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.
- Dip the tops of the cookies into the remaining 1/4 cup of confectioners’ sugar while slightly warm, being gentle to avoid pressing too hard into the crinkles. Enjoy your delightful cookies!
