Description

Deliciously rich and nutty Peanut Butter Crinkle Cookies featuring crispy edges and a soft, chewy center, perfect for any occasion.


Ingredients

  • 1 1/3 cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (113 g) unsalted butter (room temperature)
  • 1 cup (210 g) packed light brown sugar
  • 1/2 cup (125 g) creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup (70 g) granulated sugar
  • 3/4 cup (90 g) confectioners’ sugar (divided)

Instructions

  1. Preheat your oven to 350° F (175° C) and line two cookie sheets with parchment paper. Set them aside.
  2. Whisk together flour, baking soda, baking powder, and salt until well-combined in a medium bowl. Set aside.
  3. Beat the room temperature butter with the brown sugar and peanut butter for about 4 minutes, until fluffy.
  4. Add in the egg and vanilla extract, mixing until fully incorporated (around 30 seconds).
  5. Gradually add in the flour mixture with the mixer on low speed. Mix until just combined, being cautious not to overmix.
  6. Prepare two small bowls: one with granulated sugar and the other with 1/2 cup of confectioners’ sugar.
  7. Scoop approximately 1 tablespoon of dough, roll it into a ball, and then roll in granulated sugar first. Follow by coating with the powdered sugar. Repeat until all dough is used, placing the rolled balls 2 inches apart on the cookie sheets.
  8. Bake for 12-14 minutes, until the cookies look firm around the edges and have developed their characteristic crinkles on top.
  9. Allow to cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.
  10. Dip the tops of the cookies into the remaining 1/4 cup of confectioners’ sugar while slightly warm, being gentle to avoid pressing too hard into the crinkles. Enjoy your delightful cookies!

Notes
