Description

Delicious cinnamon rolls filled with creamy peanut butter, ripe bananas, and warm cinnamon, perfect for breakfast or dessert.


Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 cup plant-based milk (warm)
  • 1/4 cup plant-based butter, melted
  • 1 ripe banana, mashed
  • 1/2 cup peanut butter
  • 1 tbsp cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Combine warm plant-based milk with sugar and yeast in a bowl. Let it rest for 5-10 minutes until it bubbles up.
  2. Whisk together the all-purpose flour and salt in a large mixing bowl. Pour in your yeast mixture and melted plant-based butter, mixing well to form a soft dough.
  3. Knead the dough on a floured surface for about 5 minutes until itโ€™s smooth and elastic. Transfer it to a greased bowl, cover, and let it rise in a warm spot for about an hour.
  4. Roll out the dough into a rectangular shape. Spread the mashed banana and peanut butter evenly over the surface. Sprinkle with cinnamon and brown sugar.
  5. Roll the dough tightly into a log from the long side, then slice it into individual rolls. Place these in a greased baking pan.
  6. Preheat your oven to 350ยฐF (175ยฐC) and let the rolls rise again for about 30 minutes.
  7. Bake the rolls for 25-30 minutes or until they are golden brown on top.
  8. Let the rolls cool slightly before serving.

Notes

For an extra indulgence, top with vegan cream cheese icing or nuts. Leftovers can be stored at room temperature for up to two days.
