Ingredients

  • 1 cup sugar (divided)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup milk (or plant-based milk)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced peaches, raspberries, 1/2 cup of sugar, lemon juice, and vanilla extract in a mixing bowl. Spread this fruity mixture evenly in a baking dish.
  3. Whisk together the flour, baking powder, and salt in another bowl. Add the remaining 1/2 cup of sugar, melted butter, and milk, mixing until just combined.
  4. Pour the batter over the fruit mixture, covering it evenly. Sprinkle a teaspoon of cinnamon on top.
