Description

A delightful twist on a classic dessert that merges peach cobbler flavors with chia seeds, perfect for breakfast or a light dessert.

Ingredients

Scale
  • 2 cups almond milk (or any milk of your choice)
  • 1/4 cup chia seeds
  • 1/2 cup caramelized peaches (fresh or canned)
  • 1/4 cup maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granola (optional for extra texture)
  • Cinnamon (optional, for garnish)

Instructions

  1. Whisk together the almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl.
  2. Let the mixture sit for about 5 minutes.
  3. Give it another good stir to prevent clumping, then cover and refrigerate for at least 2 hours, or overnight for best texture.
  4. Heat a pan over medium heat and add sliced peaches, cooking until soft and golden, about 5-7 minutes.
  5. Layer the chia pudding in a glass, top with caramelized peaches, and sprinkle with granola.
  6. Finish with a light dusting of cinnamon if desired.

Notes

Stir well after mixing and before refrigerating to avoid clumps. Store leftovers in an airtight container and consume within 5 days.
