Description

A delightful fusion of cheesecake and peach cobbler in bar form, perfect for gatherings and special occasions.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups peaches, sliced (fresh or canned)
  • 1 tsp cinnamon
  • 1 cup peach pie filling (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the crumb mixture into the bottom of your prepared baking dish to form a solid crust.
  4. Beat the softened cream cheese and 1 cup of sugar together in another mixing bowl until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Pour the cream cheese mixture over the crust in the baking dish, spreading it evenly.
  7. Toss the sliced peaches with cinnamon in a separate bowl. Layer the cinnamon peaches on top of the cheesecake filling.
  8. Add the optional peach pie filling on top for extra flavor.
  9. Bake for 35-40 minutes, or until the center is set and slightly jiggly.
  10. Cool completely before refrigerating for at least 2 hours to help the bars set beautifully.
  11. Serve chilled, with a dollop of whipped cream if desired.

Notes

Best enjoyed chilled. Can be topped with powdered sugar or caramel sauce for an indulgent twist.
