- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 cups peaches, sliced (fresh or canned)
- 1 tsp cinnamon
- 1 cup peach pie filling (optional)
- Whipped cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
- Press the crumb mixture into the bottom of your prepared baking dish to form a solid crust.
- Beat the softened cream cheese and 1 cup of sugar together in another mixing bowl until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Pour the cream cheese mixture over the crust in the baking dish, spreading it evenly.
- Toss the sliced peaches with cinnamon in a separate bowl. Layer the cinnamon peaches on top of the cheesecake filling.
- Add the optional peach pie filling on top for extra flavor.
- Bake for 35-40 minutes, or until the center is set and slightly jiggly.
- Cool completely before refrigerating for at least 2 hours to help the bars set beautifully.
- Serve chilled, with a dollop of whipped cream if desired.
Notes
Best enjoyed chilled. Can be topped with powdered sugar or caramel sauce for an indulgent twist.
