- 200g pasta (your choice)
- 100g Italian sausage, casing removed
- 1 can (400g) crushed tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 large eggs
- 50g grated Pecorino Romano cheese
- 50g grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Boil water in a large pot, add salt, and cook the pasta according to package instructions until itโs al dente.
- Sautรฉ Aromatics: Meanwhile, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until itโs translucent.
- Brown the Sausage: Toss in the garlic and Italian sausage, stirring until the sausage is nicely browned.
- Add Tomatoes: Stir in the crushed tomatoes and season with salt and pepper. Allow the mixture to simmer for about 10 minutes.
- Whisk the Eggs and Cheese: In a bowl, whisk together the eggs, Pecorino, and Parmesan cheese until well combined.
- Combine Pasta and Sauce: Once the pasta is cooked, reserve a cup of the pasta water and drain the rest. Quickly add the hot pasta to the skillet with the sauce and remove from heat.
- Make it Creamy: Stir in the egg and cheese mixture, allowing the heat to create a creamy sauce. If it appears too thick, add reserved pasta water gradually until you reach the desired consistency.
- Garnish and Serve: Finish with a sprinkle of fresh parsley before serving.

Use high-quality sausage and fresh cheeses for best flavor. Reserve pasta water for creaminess.
