Description

A comforting Italian pasta dish combining Italian sausage and crushed tomatoes with a creamy egg and cheese sauce.


Ingredients

  • 200g pasta (your choice)
  • 100g Italian sausage, casing removed
  • 1 can (400g) crushed tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 50g grated Pecorino Romano cheese
  • 50g grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Boil water in a large pot, add salt, and cook the pasta according to package instructions until itโ€™s al dente.
  2. Sautรฉ Aromatics: Meanwhile, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until itโ€™s translucent.
  3. Brown the Sausage: Toss in the garlic and Italian sausage, stirring until the sausage is nicely browned.
  4. Add Tomatoes: Stir in the crushed tomatoes and season with salt and pepper. Allow the mixture to simmer for about 10 minutes.
  5. Whisk the Eggs and Cheese: In a bowl, whisk together the eggs, Pecorino, and Parmesan cheese until well combined.
  6. Combine Pasta and Sauce: Once the pasta is cooked, reserve a cup of the pasta water and drain the rest. Quickly add the hot pasta to the skillet with the sauce and remove from heat.
  7. Make it Creamy: Stir in the egg and cheese mixture, allowing the heat to create a creamy sauce. If it appears too thick, add reserved pasta water gradually until you reach the desired consistency.
  8. Garnish and Serve: Finish with a sprinkle of fresh parsley before serving.
