Instructions
- Whisk together 1 cup of glutinous rice flour, 1/2 cup of sugar, and 1 teaspoon of baking powder in a mixing bowl.
- Combine 1/2 cup of coconut milk, 1/2 cup of pandan juice, and 1/4 cup of water in another bowl.
- Incorporate the wet mixture into the dry ingredients gradually. Stir until a soft dough forms.
- Shape the dough into small balls or donut shapes, depending on your preference.
- Heat oil in a deep pan over medium heat.
- Carefully fry the mochi donuts in hot oil for about 2-3 minutes on each side, or until golden brown.
- Remove them from the oil and let them drain on paper towels.
- Dust with powdered sugar before serving.
Notes
For enhanced flavor, infuse coconut milk with pandan leaves before mixing it into the dough.
