Description

Delightful and chewy Pandan Mochi Donuts infused with the aromatic essence of pandan, perfect for any occasion.


Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup sugar
  • 1/2 cup coconut milk
  • 1/2 cup pandan juice (or pandan extract)
  • 1/4 cup water
  • 1 teaspoon baking powder
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Whisk together 1 cup of glutinous rice flour, 1/2 cup of sugar, and 1 teaspoon of baking powder in a mixing bowl.
  2. Combine 1/2 cup of coconut milk, 1/2 cup of pandan juice, and 1/4 cup of water in another bowl.
  3. Incorporate the wet mixture into the dry ingredients gradually. Stir until a soft dough forms.
  4. Shape the dough into small balls or donut shapes, depending on your preference.
  5. Heat oil in a deep pan over medium heat.
  6. Carefully fry the mochi donuts in hot oil for about 2-3 minutes on each side, or until golden brown.
  7. Remove them from the oil and let them drain on paper towels.
  8. Dust with powdered sugar before serving.

Notes

For enhanced flavor, infuse coconut milk with pandan leaves before mixing it into the dough.
