Ingredients

  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Water (as needed)
  • Oil for frying

Instructions

  1. Start by washing and chopping the vegetables into small, bite-sized pieces.
  2. In a mixing bowl, blend the chickpea flour, cumin seeds, turmeric powder, red chili powder, and salt.
  3. Slowly add water to the dry ingredients while stirring to create a smooth batter.
  4. Fold in the chopped vegetables, ensuring they are well coated with the batter.
  5. Heat oil in a frying pan over medium heat.
  6. Carefully drop spoonfuls of the batter-coated vegetables into the hot oil.
  7. Fry until the pakoras turn golden brown and crispy, which usually takes about 4-5 minutes.
  8. Remove with a slotted spoon and drain on paper towels to absorb excess oil.
  9. Serve immediately, pairing with green chutney or ketchup for an added flavor kick.

Notes

Aim for around 350ยฐF (175ยฐC) for frying for the best crispy texture. Avoid overcrowding the pan while frying.
