- 4 cups vegetable or chicken broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons chili paste or sauce (adjust to taste)
- 200g ramen noodles
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 2 green onions, chopped
- Soft-boiled eggs (for serving)
- Nori (seaweed sheets, for serving)
- Sesame seeds (for garnish)
Instructions
- Heat sesame oil in a large pot over medium heat.
- Add the sliced mushrooms and sautรฉ until softened.
- Pour in the broth, miso paste, soy sauce, and chili paste. Stir until the miso is fully dissolved.
- Bring this flavorful mixture to a boil, then add the ramen noodles. Cook according to the package instructions (which is usually around 4-5 minutes).
- A minute before the noodles are finished, stir in the baby spinach and chopped green onions.
- Serve hot, topped with soft-boiled eggs, nori sheets, and a sprinkle of sesame seeds.
Notes
For an even richer flavor, toast the sesame oil before adding mushrooms. Leftovers can be stored in an airtight container for up to three days; add broth when reheating to maintain moisture.
