Ingredients

  • 8 ounces pasta (your choice: spaghetti, fettuccine, or even gluten-free)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional for a kick)
  • 4 cups chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the minced garlic and, if using, the red pepper flakes for about one minute until fragrant.
  3. Combine the pasta with the broth and bring to a boil, then reduce the heat and let it simmer, stirring occasionally for about 10-12 minutes or until al dente.
  4. Add the grated Parmesan, lemon juice, and zest. Season with salt and pepper to taste.
  5. Garnish with freshly chopped parsley before serving.
