Description

A simple and delicious one-pot dish featuring chicken, orzo pasta, and fresh greens, perfect for busy weeknights.


Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup spinach (or other greens)
  • Juice of 1 lemon
  • 1 cup cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until it’s golden and no longer pink.
  3. Stir in the orzo pasta, chicken broth, and lemon juice.
  4. Bring the mixture to a boil, then reduce the heat to a simmer and cover the pot.
  5. Allow to cook for about 10 minutes or until the orzo is tender.
  6. Stir in the spinach and cream, cooking until the spinach wilts.
  7. Season generously with salt and pepper. If you like, sprinkle grated Parmesan cheese on top before serving.

Notes

Feel free to swap in your favorite greens or adjust the cream for a lighter version.
