Ingredients

  • 1 cup rice (white or brown)
  • 2 cups beef broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons Cajun seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayo
  • 1 tablespoon hot sauce
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef over medium heat until itโ€™s fully cooked. Drain any excess fat.
  2. Add the diced onion and bell pepper to the pot, and cook until they are softened.
  3. Stir in the Cajun seasoning and rice, then pour in the beef broth. Bring it all to a boil.
  4. Reduce the heat, cover, and let it simmer for about 20-25 minutes or until the rice is tender.
  5. Stir in the shredded cheddar cheese until itโ€™s melted and creamy.
  6. Mix the mayo with hot sauce in a small bowl for a zesty Cajun mayo.
  7. Serve the cheesy beef rice topped with a drizzle of the spicy mayo.
