- 1 lb ground beef
- 1 cup rice (white or brown)
- 2 cups beef broth
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons Cajun seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup mayo
- 1 tablespoon hot sauce
- Salt and pepper to taste
Instructions
- Brown the ground beef over medium heat until itโs fully cooked. Drain any excess fat.
- Add the diced onion and bell pepper to the pot, and cook until they are softened.
- Stir in the Cajun seasoning and rice, then pour in the beef broth. Bring it all to a boil.
- Reduce the heat, cover, and let it simmer for about 20-25 minutes or until the rice is tender.
- Stir in the shredded cheddar cheese until itโs melted and creamy.
- Mix the mayo with hot sauce in a small bowl for a zesty Cajun mayo.
- Serve the cheesy beef rice topped with a drizzle of the spicy mayo.
Notes
For best results, use lean ground beef and experiment with different cheeses. Leftovers can be stored in the fridge for up to 3 days or frozen for 2 months.
