- 1 pound kielbasa, sliced
- 2 pounds potatoes, diced (Yukon Gold recommended)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) or heat a large skillet over medium heat.
- Toss together the diced potatoes, sliced kielbasa, chopped bell pepper, onion, olive oil, garlic powder, salt, and pepper in a large bowl.
- If baking, spread the mixture on a baking sheet and bake for 25-30 minutes until potatoes are tender, stirring halfway. If using a skillet, sauté until potatoes are tender, about the same time.
- Garnish with fresh parsley if desired and serve hot.
Notes
For added flavor, consider marinating the kielbasa in mustard and honey before cooking. Feel free to substitute ingredients based on availability.
