Description

A comforting and quick one-pan meal featuring tender gnocchi, savory Italian sausage, cherry tomatoes, and fresh spinach in a creamy sauce.


Ingredients

  • 1 package gnocchi
  • 1 lb Italian sausage
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spatula.
  2. Toss in the minced garlic and sauté for another minute until fragrant.
  3. Stir in the halved cherry tomatoes and spinach. Cook until the spinach wilts down.
  4. Add the gnocchi and pour in the heavy cream, stirring everything together to ensure even coating.
  5. Let it simmer for about 5-7 minutes or until the gnocchi is heated through and slightly tender.
  6. Stir in the grated Parmesan cheese, season with salt and pepper to taste, and mix well.
  7. Serve warm, garnished with extra Parmesan cheese if desired.

Notes

For lighter versions, substitute turkey sausage or use sautéed mushrooms and extra vegetables. Leftovers can be stored in an airtight container in the fridge for up to three days.
