Description

Freshly baked Oatmeal Molasses Rolls that are warm, hearty, and comforting, perfect for any meal.


Ingredients

  • 20 grams fresh cake yeast
  • ยผ cup lukewarm water
  • 1 stick butter, cut into cubes
  • ยพ cup milk
  • 1 tablespoon dark brown sugar
  • 60 grams rolled oats
  • 2 tablespoons molasses
  • 2 teaspoons salt
  • 1 egg
  • 275 grams flour
  • 23 tablespoons melted butter (for brushing the tops of rolls)

Instructions

  1. Activate the yeast: In a small bowl, combine the yeast, lukewarm water, and a pinch of sugar. Let it stand until bubblyโ€”this usually takes about 5-10 minutes.
  2. Prepare the mixture: In the bowl of a stand mixer, add the cubed butter. In a small saucepan, scald the milk and pour it over the butter. Once melted, add dark brown sugar, oats, molasses, and salt. Blend well and allow the mixture to cool until lukewarm.
  3. Combine ingredients: Mix in the egg, then pour the dissolved yeast into this oat mixture. Blend on low speed, then gradually mix in the flour. Start at a slow speed, then increase to medium for about 8 minutes. The dough will be sticky, which is a good sign!
  4. Rest and chill: Let the dough rest for 10 minutes, then cover the bowl with plastic wrap and refrigerate for at least two hours or overnight to develop flavors.
  5. Shape the rolls: Turn the chilled dough out onto a floured surface. Divide it into 9-12 equal pieces, shaping them into rolls. Place them seam-side down in a well-buttered 9-inch round pan. Brush the tops with melted butter and sprinkle with rolled oats.
  6. Final rise: Allow the rolls to rise in a warm place until doubled in sizeโ€”this takes about two hours.
  7. Bake: Preheat your oven to 350ยฐF (175ยฐC). Bake the rolls for 35-40 minutes, or until they are beautifully golden brown and sound hollow when tapped. Finish by brushing generously with more melted butter.
