Ingredients

- ½ small/medium onion
- 1 tablespoon butter
- 2 ½ cups peas (fresh or frozen)
- 1 ½ cups chicken or vegetable stock
- 2 tablespoons fresh mint, roughly chopped
- Salt and pepper, to taste
- 1 tablespoon crème fraîche, to serve (optional)
Instructions
- Sauté the onion: In a pot, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until soft and translucent.
- Simmer the peas: Stir in the peas and pour in the stock. Bring the mixture to a simmer and cook until the peas are tender, which will take between 2 to 7 minutes depending on whether you’re using fresh or frozen peas.
- Blend: Remove the pot from heat. Add the fresh mint, then blend everything together until the soup is completely smooth.
- Serve: Season with salt and pepper to taste. This soup can be enjoyed warm or chilled, with a swirl of crème fraîche for an extra creamy finish.
Notes
For a vegetarian version, use vegetable stock instead of chicken stock. This soup can be frozen for up to 3 months.
