Description

A warm, creamy shrimp and corn bisque that celebrates the flavors of New Orleans with fresh ingredients and classic Creole seasoning.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 2 cups corn kernels (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 small green bell pepper, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Creole seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 green onions, sliced for garnish
  • Fresh parsley, chopped for garnish

Instructions

  1. Sauté the Aromatics: In a large pot, melt the butter and olive oil over medium heat. Add the chopped onion, celery, and bell pepper. Sauté until softened, about 5-7 minutes. Stir in the garlic and cook for an additional minute until fragrant.
  2. Build the Bisque Base: Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for about 2 minutes to eliminate the raw flour taste. Gradually whisk in the seafood or chicken broth, ensuring no lumps remain.
  3. Incorporate the Corn and Shrimp: Add the corn kernels, Creole seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a gentle simmer, then let it cook for 10 minutes.
  4. Finish with Shrimp and Cream: Stir in the shrimp and heavy cream, cooking on low for an additional 5 minutes, or until the shrimp are pink and cooked through.
  5. Garnish and Serve: Ladle the bisque into bowls and garnish with sliced green onions and chopped parsley before serving.

Notes

Feel free to substitute coconut milk for a lighter option and different fresh herbs for garnish.
