Description

A rich and creamy chicken dish infused with fresh basil and topped with gooey mozzarella, perfect for any weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 1 cup fresh mozzarella cheese, sliced
  • Parmesan cheese for garnish (optional)

Instructions

  1. Start by seasoning the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Afterward, remove the chicken from the skillet and set it aside.
  3. In the same skillet, throw in the minced garlic. Sauté for about 30 seconds, until it becomes fragrant, but be careful not to let it burn!
  4. Pour in the heavy cream and bring it to a gentle simmer. Stir in the chopped basil and adjust the seasoning with salt and pepper.
  5. Return the cooked chicken to the skillet, drizzling the sauce over the top to coat.
  6. Layer fresh mozzarella slices on top of each chicken breast.
  7. Cover the skillet and let it sit for 3-5 minutes, allowing the mozzarella to melt beautifully.
  8. Serve hot, garnished with extra basil and Parmesan cheese if desired.

Notes

For a lighter version, substitute heavy cream with a mix of Greek yogurt and broth.
