- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- 1 cup fresh mozzarella cheese, sliced
- Parmesan cheese for garnish (optional)
Instructions
- Start by seasoning the chicken breasts generously with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Afterward, remove the chicken from the skillet and set it aside.
- In the same skillet, throw in the minced garlic. Sauté for about 30 seconds, until it becomes fragrant, but be careful not to let it burn!
- Pour in the heavy cream and bring it to a gentle simmer. Stir in the chopped basil and adjust the seasoning with salt and pepper.
- Return the cooked chicken to the skillet, drizzling the sauce over the top to coat.
- Layer fresh mozzarella slices on top of each chicken breast.
- Cover the skillet and let it sit for 3-5 minutes, allowing the mozzarella to melt beautifully.
- Serve hot, garnished with extra basil and Parmesan cheese if desired.
Notes
For a lighter version, substitute heavy cream with a mix of Greek yogurt and broth.
