A delightful dish featuring juicy chicken topped with fresh bruschetta, melted mozzarella, and a rich balsamic reduction.
Ingredients

- 1 cup balsamic vinegar
- 4 chicken breasts or cutlets
- Seasoned salt and black pepper
- 4 oz mozzarella cheese, sliced or shredded
- 2 cups diced tomatoes
- ¼ cup fresh basil, finely chopped
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 3 tablespoons freshly grated Parmesan cheese
- ½ teaspoon sugar
- 1 medium garlic clove, finely minced
- Salt and black pepper to taste
Instructions
- Pour the balsamic vinegar into a small saucepan. Bring it to a boil over medium-high heat, stirring occasionally. Reduce the heat and let it simmer for about 20 minutes, until it thickens and coats the back of a spoon. Remove from heat and set aside to cool.
- Combine the bruschetta topping ingredients: diced tomatoes, chopped basil, olive oil, balsamic vinegar, Parmesan, sugar, minced garlic, and a pinch of salt and pepper. Stir well, cover, and let it sit while you prepare the chicken.
- Position your oven rack directly under the broiler and preheat it to high.
- Heat a large skillet over medium-high heat and lightly coat it with nonstick spray or a bit of oil. Season both sides of the chicken breasts with seasoned salt and black pepper.
- Add the chicken to the skillet and cook until it’s golden brown on one side (about 2 to 4 minutes). Lower the heat to medium, flip the chicken, and continue cooking until it’s almost done (another 4 to 6 minutes).
- Spoon 2-3 tablespoons of bruschetta topping over each piece of chicken, then sprinkle the mozzarella cheese evenly on top.
- Transfer the skillet to the broiler and cook until the cheese is melted and bubbly.
- Serve the chicken drizzled with the balsamic reduction and extra bruschetta topping on the side.
Notes
Best served with a side salad or roasted vegetables. For the ultimate presentation, garnish with basil leaves.
