Description

A delightful dish featuring juicy chicken topped with fresh bruschetta, melted mozzarella, and a rich balsamic reduction.


Ingredients

  • 1 cup balsamic vinegar
  • 4 chicken breasts or cutlets
  • Seasoned salt and black pepper
  • 4 oz mozzarella cheese, sliced or shredded
  • 2 cups diced tomatoes
  • ¼ cup fresh basil, finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons freshly grated Parmesan cheese
  • ½ teaspoon sugar
  • 1 medium garlic clove, finely minced
  • Salt and black pepper to taste

Instructions

  1. Pour the balsamic vinegar into a small saucepan. Bring it to a boil over medium-high heat, stirring occasionally. Reduce the heat and let it simmer for about 20 minutes, until it thickens and coats the back of a spoon. Remove from heat and set aside to cool.
  2. Combine the bruschetta topping ingredients: diced tomatoes, chopped basil, olive oil, balsamic vinegar, Parmesan, sugar, minced garlic, and a pinch of salt and pepper. Stir well, cover, and let it sit while you prepare the chicken.
  3. Position your oven rack directly under the broiler and preheat it to high.
  4. Heat a large skillet over medium-high heat and lightly coat it with nonstick spray or a bit of oil. Season both sides of the chicken breasts with seasoned salt and black pepper.
  5. Add the chicken to the skillet and cook until it’s golden brown on one side (about 2 to 4 minutes). Lower the heat to medium, flip the chicken, and continue cooking until it’s almost done (another 4 to 6 minutes).
  6. Spoon 2-3 tablespoons of bruschetta topping over each piece of chicken, then sprinkle the mozzarella cheese evenly on top.
  7. Transfer the skillet to the broiler and cook until the cheese is melted and bubbly.
  8. Serve the chicken drizzled with the balsamic reduction and extra bruschetta topping on the side.

Notes

Best served with a side salad or roasted vegetables. For the ultimate presentation, garnish with basil leaves.
