- 2 lbs beef chuck, cut into chunks
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cups beef broth
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- 1 tablespoon oregano
- 1 tablespoon cumin
- Salt and pepper to taste
- Sofrito, to taste
Instructions
- Marinate the beef: In a bowl, combine chunks of beef with vinegar, salt, pepper, garlic, and spices. Let this sit for at least 30 minutes or overnight for deeper flavor.
- Brown the beef: In a large pot, heat olive oil over medium-high heat. Add the marinated beef in batches to avoid overcrowding. Brown all sides until golden, about 5-7 minutes.
- Add vegetables: Stir in chopped onions, bell peppers, and carrots. Sauté for about 3-5 minutes until softened.
- Simmer: Pour in the beef broth, scraping any bits off the bottom of the pot. Bring to a boil, then reduce to a simmer. Cover and cook for 90 to 120 minutes or until the beef is tender.
- Finish the stew: If using potatoes, add them about 30 minutes before the stew is done. Adjust seasoning with salt and pepper as needed.
Notes
For best results, marinate the beef longer and don’t rush the browning step for a richer flavor.
