- 1 cup plain yogurt
- ½ cup milk
- ½ cup mild-flavored oil or melted butter
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ cup light brown sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners.
- In a large mixing bowl, whisk together the plain yogurt, milk, oil or melted butter, eggs, and vanilla extract until smooth.
- In another bowl, combine the flour, light brown sugar, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
- Fold in the rainbow sprinkles until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
