Description

Delightful mini muffins packed with yogurt and colorful sprinkles, perfect for breakfast or snacks.


Ingredients

  • 1 cup plain yogurt
  • ½ cup milk
  • ½ cup mild-flavored oil or melted butter
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ cup light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners.
  2. In a large mixing bowl, whisk together the plain yogurt, milk, oil or melted butter, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the flour, light brown sugar, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
  5. Fold in the rainbow sprinkles until evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
