Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, and 2 tablespoons sugar until well mixed.
  3. Press the crumb mixture firmly into the bottom of a greased mini muffin tin to create a crust.
  4. Beat the cream cheese with an electric mixer until smooth and creamy.
  5. Add in sugar and vanilla extract, mixing until well combined.
  6. Beat in the eggs one at a time, ensuring low speed after each addition to keep the batter smooth.
  7. Stir in sour cream and flour, mixing until just combined.
  8. Pour the cheesecake mixture carefully over the crust in the muffin tin.
  9. Bake for about 20-25 minutes, or until edges are set and the center still has a little jiggle.
  10. Cool before refrigerating for at least 4 hours to firm up before serving.
