Description

A comforting meatloaf infused with bold Mexican flavors, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup salsa
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. Combine the ground beef, breadcrumbs, shredded cheese, diced onion, diced bell pepper, minced garlic, taco seasoning, salsa, beaten eggs, and seasoning in a large bowl.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Bake for about 60 minutes, or until itโ€™s cooked through and no longer pink in the center.
  5. Let it rest for 10 minutes before slicing.

Notes

Feel free to substitute the ground beef with turkey or chicken for a lighter option.
