- 4 chicken legs
- 2 dried pasilla chiles
- 2 dried guajillo chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt, to taste
- Pepper, to taste
- 2 cups chicken broth
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a skillet over medium heat.
- Season the chicken with salt and pepper, browning each piece on all sides.
- Remove the chicken and set it aside.
- Add the chopped onions and minced garlic to the skillet; sautรฉ until softened and fragrant.
- Add the dried chiles, apple cider vinegar, paprika, and cumin; cook for a couple of minutes to enhance the flavors.
- Return the chicken to the skillet and pour in the chicken broth.
- Bring the mixture to a simmer, cover, and cook for about 30-40 minutes until the chicken is tender.
- Serve hot alongside rice or warm tortillas to soak up the tasty sauce.
Notes
For deeper flavor, marinate the chicken overnight. Adjust heat level by varying the amount of dried chiles used.
