Ingredients
- Cod fillets
- Fresh tomatoes
- Fresh basil
- Olive oil
- Garlic
- Salt
- Pepper
- Lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- Pour olive oil into a medium pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Toss in chopped fresh tomatoes and let them simmer until soft.
- Stir in chopped basil and season with salt and pepper.
- Arrange the cod fillets in a baking dish and pour the sauce over them.
- Drizzle fresh lemon juice on top.
- Bake for 15-20 minutes or until the cod is cooked through.
- Serve hot and garnish with additional basil if desired.
Notes
Fresh tomatoes bring brighter flavor, but canned tomatoes can be used in a pinch.
