Description

A quick and flavorful Mediterranean dish featuring cod fillets baked in a fresh tomato and basil sauce.


Ingredients

  • Cod fillets
  • Fresh tomatoes
  • Fresh basil
  • Olive oil
  • Garlic
  • Salt
  • Pepper
  • Lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pour olive oil into a medium pan over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Toss in chopped fresh tomatoes and let them simmer until soft.
  5. Stir in chopped basil and season with salt and pepper.
  6. Arrange the cod fillets in a baking dish and pour the sauce over them.
  7. Drizzle fresh lemon juice on top.
  8. Bake for 15-20 minutes or until the cod is cooked through.
  9. Serve hot and garnish with additional basil if desired.

Notes

Fresh tomatoes bring brighter flavor, but canned tomatoes can be used in a pinch.
